Quorn Mince and Vegetable Pie

If Quorn chicken isn’t your thing then here’s a Quorn mince pie to try instead. Just like the other pie it’s full of great flavour and vegetables but still just as easy to make.

Serves: 2

Total: £7.81

  • Preheat the oven
  • Chop up the carrot, courgette, mushroom and broccoli
  • Heat up the oil in a pan and add the Quorn mince
  • Add the carrot and cook for a moment until it starts to soften
  • Add the broccoli
  • Once it has almost cooked you can add the mushroom, courgette and spinach
  • Add the seasoning then stir
  • Pour the gravy into the pan and stir
  • Empty it into an oven proof dish
  • Place the pastry on top
  • Cut of the excess pastry leaving a bit around the edges
  • Tuck down the edges so that the filling doesn’t bubble up over the edges
  • Cut a cross in the centre of the pie
  • Place in the oven and cook for 15-20 minutes or until it’s golden brown
  • Serve

This is just the basic recipe for an easy pie, you can customise it by using your own choice of vegetables or sauce instead of gravy. Let me know about the recipes you decide to create.
